Pork Enchiladas

The pork enchiladas were a big hit in my family, they loved them. I served them witht he Spanish Rice and everyone gobbled them up.

I think I voted twice on the Broccoli cheese bake. I voted improve because I think it was too dry, but that would be easy to fix. Also, if you would rather have corn instead of broccoli, that would be easy to do also, just let me know.

Southwest Chicken

The Southwest Chicken was a big hit in my house. I bought the Spanish Rice & Sauce (Great Value brand) at Walmart and served it with the chicken. It was great.

Turkey Chili

The chili needs to simmer a while before enjoying. I usually cook it all day in the crockpot on low. I also add more pepper and crushed red pepper to make it more spicy.

Sweet and Sour Meatballs

I made extra sauce for the sweet and sour meatballs so you could serve them with rice and have plent y of sauce for the rice. You can warm the meatballs up in a pot, they are fully cooked and ready to eat. Thanks Nicki and Mindy for rolling all those meatballs, I know that was alot of work.
